What's the first thing I think of when Winter Vacation is over? School lunches. I always try to come up with creative but easy lunch ideas for the week. Something my oldest daughter can help with when I'm busy with the baby. One of their favorites is breakfast for lunch! And with the help of Jif and Smucker's, we did a twist on a classic peanut butter and jelly sandwich. It's perfect for school lunches!

Instead of using bread, we use Mini Waffles. The waffles add a touch of sweetness and crispness. My daughter says her favorite part is that the peanut butter gets all gooey and melty when you spread it on the still warm waffles. Yum. We like to use Smucker's Natural Strawberry Fruit Spread and Jif Natural Creamy Peanut Butter Spread. I can't leave ShopRite without them! The best part about these Mini PB&J Waffle Sandwiches is they are so easy to make, you really don't need to follow a recipe! But I'm going to add one anyway, just in case ;)

Ingredients:

Smucker's Natural Strawberry Fruit Spread 
Jif Natural Creamy Peanut Butter Spread
Mini Waffles

Instructions:
Put your Mini Waffles in the toaster
Spread your Smucker's Fruit Spread on one of the mini waffles
Spread your Jif Natural Creamy Peanut Butter on the other mini waffle
Put them together and BAM, You have yourself Mini PB&J Waffle Sandwiches. 

It doesn't get much easier than that. Feel free to add accessories like we did, we like to use food picks.
